(1) Preheat oven to 325F (163C) Oil baking pans (better to use coconut oil) and line with parchment paper.
(2) In a large mixing bowl, mix eggs, coconut oil (or melted oil/butter) and water for 30 seconds on medium speed.
(3) Add mix and beat for 60 seconds on medium speed, scraping down sides of bowl with a spatula. Divide batter evenly between pans and smooths tops with a spatula. (If you don't have mix, please mix with potate flour or starch about 450g, Tapioca flour 50g, Xanthan Gum 30g, Baking powder, 4 Tbsp, etc to create your own flour)
(4) Place pans 3 inches apart on the middle rack of the oven. Bake about 25 to 30 minutes until a toothpick inserted into the center comes out clean.
(5) Cool cakes for 15 minutes. Please paste the coconut vanilla frost between cakes or all around the cake. (Please arrange for your choice)
(6) Sprinkle the coconut flake on cake, and it is done! You can design topping or any for your creation. It looks like the snow fallen and gently sweet soft cake. It is a typical American Christmas cake to enjoy.
